某(それがし) [Soregashi]:
“Soregashi” is an honorific language once used by Samurai when they used to refer to themselves as a sign of respect to others.
We named our restaurant Soregashi to mark our humble beginnings.
ONLY THE FRESH INGREDIENTS
The traditional Washoku cuisine uses very little seasoning in order to enhance the authentic flavor of each entree; that’s why we use only the hand-picked fresh ingredients in all of our dishes.
